THE GREEN-CRUNCH SHOCKWAVE
(Our Play on Thai Papaya Salad / Som Tum)

Ingredients
- 300g Green Papaya (shredded) or Carrot strips
- 2 Bird's eye chilies
- 2 cloves Garlic
- 2 tbsp Fish sauce
- 2 tbsp Lime juice
- 1 tbsp Palm sugar
- 20g Roasted peanuts
- 100g Cherry tomatoes
Cooking Method
- The Smash Pound garlic and chilies in a mortar and pestle until a rough paste forms.
- The Bloom Add sugar, lime juice, and fish sauce; stir until the sugar dissolves into the fire.
- The Marriage Toss in papaya, tomatoes, and peanuts; bruise slightly with the pestle to release the juices.
- The Finish Serve immediately while the crunch is at its peak.
