THE GORGONZOLA MEAT-ORBS
(Our Play on Greek Keftedes with an Italian Heart)
Ingredients: 500g Beef mince, 100g Gorgonzola (cubed small), 1 Red onion (pureed), 2 cloves Garlic, 1 tbsp Dried Oregano, 1 tsp Black pepper, 1 tsp Salt, 1 Egg, 50g Breadcrumbs (soaked in 20ml Milk)...
Ingredients
- 500g Beef mince
- 100g Gorgonzola (cubed small)
- 1 Red onion (pureed)
- 2 cloves Garlic
- 1 tbsp Dried Oregano
- 1 tsp Black pepper
- 1 tsp Salt
- 1 Egg
- 50g Breadcrumbs (soaked in 20ml Milk)
Cooking Method
- The Build Knead meat, onion, garlic, and soaked crumbs; add the dry spices with a tiny 5ml splash of water to release the herb perfume.
- The Shape Form into small balls; press a cube of Gorgonzola into the center and seal tightly.
- The Scorch Fry in oil on maximum heat until rock-hard charred and the blue cheese is a molten silk inside.
- The Final Flourish Serve with raw fresh basil matchsticks and a squeeze of raw lemon.
