THE GORGONZOLA LEAF-TUBES

Ingredients: 12 Pickled Cabbage leaves, 400g Beef mince, 100g Gorgonzola (crumbled), 1 tsp Black pepper, 0.5 tsp Nutmeg, 1 tsp Salt, 200ml Double cream, 100ml Beef stock, 1 tbsp White wine vinegar...

Ingredients

  • 12 Pickled Cabbage leaves
  • 400g Beef mince
  • 100g Gorgonzola (crumbled)
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg
  • 1 tsp Salt
  • 200ml Double cream
  • 100ml Beef stock
  • 1 tbsp White wine vinegar

Cooking Method

  1. The Build Knead meat with black pepper and nutmeg; add a 10ml splash of stock to loosen.
  2. The Marriage Roll meat into cabbage leaves, placing a small piece of Gorgonzola in each center.
  3. The Swell Layer rolls in a pot; add stock and vinegar. Simmer covered for 50 minutes.
  4. The Silk Merge Stir in the cream and remaining Gorgonzola off the heat until it forms a thick blue-veined silk.
  5. The Final Flourish Finish with a rain of raw fresh chives and extra black pepper.
