THE GORGONZOLA LEAF-TUBES
(Our Play on Sarma with an Italian Heart)
Ingredients: 12 Pickled Cabbage leaves, 400g Beef mince, 100g Gorgonzola (crumbled), 1 tsp Black pepper, 0.5 tsp Nutmeg, 1 tsp Salt, 200ml Double cream, 100ml Beef stock, 1 tbsp White wine vinegar...
Ingredients
- 12 Pickled Cabbage leaves
- 400g Beef mince
- 100g Gorgonzola (crumbled)
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
- 1 tsp Salt
- 200ml Double cream
- 100ml Beef stock
- 1 tbsp White wine vinegar
Cooking Method
- The Build Knead meat with black pepper and nutmeg; add a 10ml splash of stock to loosen.
- The Marriage Roll meat into cabbage leaves, placing a small piece of Gorgonzola in each center.
- The Swell Layer rolls in a pot; add stock and vinegar. Simmer covered for 50 minutes.
- The Silk Merge Stir in the cream and remaining Gorgonzola off the heat until it forms a thick blue-veined silk.
- The Final Flourish Finish with a rain of raw fresh chives and extra black pepper.
