THE GOLDEN YOGURT STEW
(Our Play on Kadai Paneer)
Ingredients: 300g Paneer (cubed), 1 Green bell pepper, 1 Red bell pepper, 1 Onion (petals), 1 tsp Turmeric, 1 tsp Cumin seeds, 1 tsp Chili powder, 100g Greek yogurt, 1 tbsp Tomato purée...

- 300g Paneer (cubed)
- 1 Green bell pepper
- 1 Red bell pepper
- 1 Onion (petals)
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Chili powder
- 100g Greek yogurt
- 1 tbsp Tomato purée
Cooking Method
- The Scorch High-heat stir-fry the peppers and onion petals until charred but crunchy.
- The Bloom In a fresh pan, sizzle cumin seeds and add the spices with a splash of water.
- The Simmer Whisk in the yogurt and tomato purée; simmer for 3 minutes.
- The Marriage Toss in the paneer and charred veg; coat every piece in the thick sauce.
- The Finish Finish with a rub of dried fenugreek leaves (Kasuri Methi).
