THE GOLDEN YOGURT STEW

Ingredients: 300g Paneer (cubed), 1 Green bell pepper, 1 Red bell pepper, 1 Onion (petals), 1 tsp Turmeric, 1 tsp Cumin seeds, 1 tsp Chili powder, 100g Greek yogurt, 1 tbsp Tomato purée...

Ingredients

  • 300g Paneer (cubed)
  • 1 Green bell pepper
  • 1 Red bell pepper
  • 1 Onion (petals)
  • 1 tsp Turmeric
  • 1 tsp Cumin seeds
  • 1 tsp Chili powder
  • 100g Greek yogurt
  • 1 tbsp Tomato purée

Cooking Method

  1. The Scorch High-heat stir-fry the peppers and onion petals until charred but crunchy.
  2. The Bloom In a fresh pan, sizzle cumin seeds and add the spices with a splash of water.
  3. The Simmer Whisk in the yogurt and tomato purée; simmer for 3 minutes.
  4. The Marriage Toss in the paneer and charred veg; coat every piece in the thick sauce.
  5. The Finish Finish with a rub of dried fenugreek leaves (Kasuri Methi).
