(Our Play on Chinese Scrambled Egg and Shrimp)

- 200g Small prawns
- 4 Eggs (whisked)
- 1 tbsp Rice wine
- 0.5 tsp Salt
- 1 tsp Toasted sesame oil
- 2 Spring onions (finely sliced)
Cooking Method
- The Scorch Fry prawns in 1 tbsp oil for 1 minute until pink; remove.
- The Bloom Add the silk ingredients and a tiny 10ml splash of water to the egg mix to ensure they stay velvety.
- The Scramble Pour eggs into a hot oiled pan; cook on medium for 30 seconds, folding gently.
- The Marriage Toss the prawns back in while the eggs are still slightly wet; turn off heat.
- The Final Flourish Scatter with raw spring onions and serve immediately.
