(Our Play on Chinese Tomato and Egg)

Ingredients
- 4 Eggs (whisked)
- 3 Large tomatoes (cubed)
- 2 Spring onions (sliced)
- 1 tsp Sugar
- 1 tsp Salt
Cooking Method
- The Scramble Fry eggs in 1 tbsp oil until just set; remove and keep soft.
- The Scorch In the same pan, fry tomatoes on high heat until they soften and release juice.
- The Bloom Add sugar, salt, and a 20ml splash of water; boil for 2 minutes to create a thick tomato soup.
- The Marriage Toss the eggs back into the tomatoes; stir gently to combine without breaking the eggs too much.
- The Final Flourish Top with raw spring onions and serve over rice.
