Ingredients

- 300g Sugar

Cooking Method
- The Swell Boil water, sugar, cinnamon, and lemon peel until it forms a thick, bubbling syrup.
- The Bloom Add vanilla and a tiny 5ml splash of warm water to the yolks to thin them.
- The Silk Merge Drizzle the yolks into the boiling syrup in thin strands (use a funnel or squeeze bottle).
- The Marriage Cook for 1 minute until set; lift out with a fork and shock in cold sugar-water.
- The Final Flourish Top with a final rain of raw ground cinnamon.
