Ingredients: 6 Egg yolks (strained), 300g Sugar, 200ml Water, 1 Cinnamon stick, 1 tsp Vanilla extract, 1 Lemon (peel only)...

Ingredients

  • 6 Egg yolks (strained)
  • 300g Sugar
  • 200ml Water
  • 1 Cinnamon stick
  • 1 tsp Vanilla extract
  • 1 Lemon (peel only)

Cooking Method

  1. The Swell Boil water, sugar, cinnamon, and lemon peel until it forms a thick, bubbling syrup.
  2. The Bloom Add vanilla and a tiny 5ml splash of warm water to the yolks to thin them.
  3. The Silk Merge Drizzle the yolks into the boiling syrup in thin strands (use a funnel or squeeze bottle).
  4. The Marriage Cook for 1 minute until set; lift out with a fork and shock in cold sugar-water.
  5. The Final Flourish Top with a final rain of raw ground cinnamon.
