THE GOLDEN SEMOLINA

Ingredients: 150g Semolina (Sooji), 2 tbsp Oil, 1 tsp Mustard seeds, 1 tsp Urad dal, 8 Curry leaves, 1 small onion (diced), 1 Carrot (finely diced), 50g Peas, 400ml Boiling water, 0.5 tsp Salt...

Ingredients

  • 150g Semolina (Sooji)
  • 2 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Urad dal
  • 8 Curry leaves
  • 1 small onion (diced)
  • 1 Carrot (finely diced)
  • 50g Peas
  • 400ml Boiling water
  • 0.5 tsp Salt

Cooking Method

  1. The Toast Dry-toast the semolina in a pan on high heat for 3 minutes until it smells nutty; remove.
  2. The Temper Heat oil; sizzle mustard seeds, dal, and curry leaves until they pop and turn golden.
  3. The Architect Add onions and veg; sauté until soft and golden.
  4. The Swell Pour in boiling water, then slowly whisk in the semolina; stir constantly until the liquid is absorbed and it forms a soft cloud.
  5. The Final Flourish Finish with a squeeze of lime and a handful of toasted cashews.
