THE GOLDEN SEMOLINA
(Our Play on Upma / Savory Breakfast Grains)
Ingredients: 150g Semolina (Sooji), 2 tbsp Oil, 1 tsp Mustard seeds, 1 tsp Urad dal, 8 Curry leaves, 1 small onion (diced), 1 Carrot (finely diced), 50g Peas, 400ml Boiling water, 0.5 tsp Salt...
Ingredients
- 150g Semolina (Sooji)
- 2 tbsp Oil
- 1 tsp Mustard seeds
- 1 tsp Urad dal
- 8 Curry leaves
- 1 small onion (diced)
- 1 Carrot (finely diced)
- 50g Peas
- 400ml Boiling water
- 0.5 tsp Salt
Cooking Method
- The Toast Dry-toast the semolina in a pan on high heat for 3 minutes until it smells nutty; remove.
- The Temper Heat oil; sizzle mustard seeds, dal, and curry leaves until they pop and turn golden.
- The Architect Add onions and veg; sauté until soft and golden.
- The Swell Pour in boiling water, then slowly whisk in the semolina; stir constantly until the liquid is absorbed and it forms a soft cloud.
- The Final Flourish Finish with a squeeze of lime and a handful of toasted cashews.
