Ingredients: 600ml Chicken stock, 2 Eggs (whisked), 1 tsp Turmeric, 1 tsp Ginger powder, 1 tbsp Cornflour, 2 tbsp Water...

Ingredients

  • 600ml Chicken stock
  • 2 Eggs (whisked)
  • 1 tsp Turmeric
  • 1 tsp Ginger powder
  • 1 tbsp Cornflour
  • 2 tbsp Water

Cooking Method

  1. The Boil Bring stock and spices to a rolling boil; stir in the cornflour slurry to thicken slightly.
  2. The Bloom Add a 20ml splash of soy sauce to the stock for depth.
  3. The Swirl Create a whirlpool in the pot; slowly pour in the eggs in a thin stream.
  4. The Finish Let sit for 1 minute as the ribbons form; garnish with spring onions.
