Ingredients

  • 400g Salt Cod (soaked and shredded)
  • 6 Eggs (whisked)
  • 200g Matchstick fries (Shoestring potatoes)
  • 2 Large onions (pureed)
  • 2 cloves Garlic
  • 1 tsp Black pepper
  • 1 tsp Salt

Cooking Method

  1. The Architect Fry onion puree and garlic in oil until sweet and golden.
  2. The Scorch Add cod; fry until the edges are slightly charred and moisture has vanished.
  3. The Bloom Add the spices with a 20ml splash of water to bloom the aromatics.
  4. The Marriage Add shoestring potatoes; stir once then pour in the whisked eggs.
  5. The Silk Merge Scramble gently on low heat until the eggs form a creamy golden silk around the reef.
  6. The Final Flourish Top with raw fresh parsley and black olives.
