Ingredients
- 400g Salt Cod (soaked and shredded)
- 6 Eggs (whisked)
- 200g Matchstick fries (Shoestring potatoes)
- 2 Large onions (pureed)
- 2 cloves Garlic
- 1 tsp Black pepper
- 1 tsp Salt
Cooking Method
- The Architect Fry onion puree and garlic in oil until sweet and golden.
- The Scorch Add cod; fry until the edges are slightly charred and moisture has vanished.
- The Bloom Add the spices with a 20ml splash of water to bloom the aromatics.
- The Marriage Add shoestring potatoes; stir once then pour in the whisked eggs.
- The Silk Merge Scramble gently on low heat until the eggs form a creamy golden silk around the reef.
- The Final Flourish Top with raw fresh parsley and black olives.
