THE GOLDEN REEF-STRANDS
(Our Play on Portuguese Seafood Pasta)
Ingredients: 400g Mixed Seafood (Prawns, Squid, Mussels), 2 Shallots (minced), 3 cloves Garlic (minced), 50g Butter, 1 tsp Saffron, 1 tsp White pepper, 100ml Dry White Wine, 100ml Double cream...

- 400g Mixed Seafood (Prawns, Squid, Mussels)
- 2 Shallots (minced)
- 3 cloves Garlic (minced)
- 50g Butter
- 1 tsp Saffron
- 1 tsp White pepper
- 100ml Dry White Wine
- 100ml Double cream
Cooking Method
- The Scorch Sear seafood in oil on max heat for 2 minutes until pink; remove.
- The Architect Melt butter and sauté shallots until soft.
- The Bloom Add saffron and pepper with a 30ml splash of wine; the heat will bloom the golden oils.
- The Silk Merge Add remaining wine and cream; simmer until it reduces to a thick yellow silk.
- The Marriage Toss hot pasta and seafood through the golden silk.
- The Final Flourish Top with raw fresh coriander and lemon zest.
