Ingredients
- 300g Salt Cod (soaked, shredded)
- 2 Eggs (whisked)
- 100g Flour
- 100ml Sparkling water
- 1 tsp White pepper
- 1 tsp Salt
- 1 Onion (minced)
- Handful of fresh Parsley
Cooking Method
- The Build Whisk flour, eggs, and water into a smooth batter; fold in the shredded cod and onion.
- The Bloom Stir the spices and parsley into the batter with a tiny 10ml splash of lemon juice to release the aromatics.
- The Scorch Drop spoonfuls into hot oil; fry until the edges are rock-hard and charred gold.
- The Marriage Drain on paper; the fritters should be light and airy but crispy.
- The Final Flourish Top with raw fresh parsley and serve with lemon wedges.
