  • 300g Salt Cod (soaked, shredded)
  • 2 Eggs (whisked)
  • 100g Flour
  • 100ml Sparkling water
  • 1 tsp White pepper
  • 1 tsp Salt
  • 1 Onion (minced)
  • Handful of fresh Parsley

Cooking Method

  1. The Build Whisk flour, eggs, and water into a smooth batter; fold in the shredded cod and onion.
  2. The Bloom Stir the spices and parsley into the batter with a tiny 10ml splash of lemon juice to release the aromatics.
  3. The Scorch Drop spoonfuls into hot oil; fry until the edges are rock-hard and charred gold.
  4. The Marriage Drain on paper; the fritters should be light and airy but crispy.
  5. The Final Flourish Top with raw fresh parsley and serve with lemon wedges.
