THE GOLDEN PORK-CURRY CLOUD
(Our Play on Japanese Tonkatsu Curry)
Ingredients: 2 Pork loins (pounded flat), 50g Panko breadcrumbs, 1 Egg, 20g Flour, 1 Onion (pureed), 2 Carrots (cubed), 600ml Beef stock, 2 tbsp Japanese Curry powder, 1 tbsp Honey...
Ingredients
- 2 Pork loins (pounded flat)
- 50g Panko breadcrumbs
- 1 Egg
- 20g Flour
- 1 Onion (pureed)
- 2 Carrots (cubed)
- 600ml Beef stock
- 2 tbsp Japanese Curry powder
- 1 tbsp Honey
Cooking Method
- The Scorch Dredge pork in panko and fry until golden and crispy; set aside.
- The Architect Fry onion puree in butter until dark and jammy.
- The Bloom Add curry powder with a 30ml splash of stock; fry for 2 minutes to release the perfume.
- The Swell Add stock, carrots, and honey; simmer for 20 minutes until the sauce is thick and glossy.
- The Finish Slice the pork and pour the golden curry cloud over the top.
