THE GOLDEN POD-MIST
(Our Play on Corn and Poblano Chowder)

Ingredients
- 400g Sweetcorn
- 2 Poblano peppers (diced)
- 1 Large onion (diced)
- 2 cloves Garlic
- 50g Butter
- 1 tsp Cumin
- 1 tsp Black pepper
- 0.5 tsp Chili flakes
- 800ml Chicken stock
- 100ml Double cream
Cooking Method
- The Architect Sauté onion and poblanos in butter until soft and charred.
- The Bloom Add garlic and spices with a 30ml splash of stock; the steam will release the earthy aromatics.
- The Swell Add remaining stock and corn; simmer for 15 minutes.
- The Silk Merge Blitz half the soup to create a thick golden silk; stir back in with the cream.
- The Final Flourish Top with raw fresh coriander and crispy tortilla strips.
