- 4 Large White onions (finely sliced)
- 50g Butter
- 1 tsp Dried Rosemary
- 1 tsp Black pepper
- 1 tsp Sugar
- 2 tbsp Sherry vinegar
- 50ml Beef stock
Cooking Method
- The Architect Sauté onions in butter on low heat for 15 minutes until they are meltingly soft and deep golden.
- The Bloom Add spices, sugar, and vinegar with a 30ml splash of stock; the steam will release the caramelized sugars.
- The Marriage Simmer uncovered for 5 minutes until the liquid evaporates into a thick, dark onion-jam.
- The Final Flourish Serve over charred bread with raw goat's cheese and fresh thyme.
