Ingredients
- 500g Potatoes (boiled and cubed)
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Salt
- 30g Fresh ginger (matchsticks)
- 2 tbsp Ghee
Cooking Method
- The Temper Heat ghee and sizzle cumin seeds until they pop.
- The Scorch Add the potatoes and fry on high heat until the edges are golden.
- The Bloom Add spices and a tiny 15ml splash of water to form a yellow, aromatic glaze.
- The Marriage Toss in the ginger matchsticks; fry for 3 minutes until the ginger is crispy.
- The Final Flourish Finish with a handful of fresh coriander and lemon juice.
