Ingredients

  • 200g Moong dal (Yellow lentils)
  • 30g Fresh ginger (grated)
  • 2 tbsp Butter/Ghee
  • 1 tsp Turmeric
  • 1 tsp Cumin seeds
  • 1 tsp Salt
  • Fresh ginger (matchsticks)
  • 1 Green chili

Cooking Method

  1. The Boil Simmer lentils in 600ml water with turmeric until they dissolve into a creamy yellow pulse.
  2. The Tarka In a separate pan, melt butter and sizzle cumin seeds until they pop.
  3. The Scorch Add the grated ginger and fry until it is deep golden and fragrant.
  4. The Marriage Pour the hot ginger-butter directly over the lentils; it should sizzle gently.
  5. The Final Flourish Top with raw ginger matchsticks for a sharp, layered finish.
