- 200g Moong dal (Yellow lentils)
- 30g Fresh ginger (grated)
- 2 tbsp Butter/Ghee
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Salt
- Fresh ginger (matchsticks)
- 1 Green chili
Cooking Method
- The Boil Simmer lentils in 600ml water with turmeric until they dissolve into a creamy yellow pulse.
- The Tarka In a separate pan, melt butter and sizzle cumin seeds until they pop.
- The Scorch Add the grated ginger and fry until it is deep golden and fragrant.
- The Marriage Pour the hot ginger-butter directly over the lentils; it should sizzle gently.
- The Final Flourish Top with raw ginger matchsticks for a sharp, layered finish.
