THE GOLDEN GARDEN-SWELL
(Our Play on Thai Yellow Vegetable Curry)

Ingredients
- 200g Sweet potato (cubed)
- 100g Cauliflower florets
- 1 Onion (petals)
- 400ml Coconut milk
- 2 tbsp Yellow curry paste
- 1 tsp Turmeric
- 1 tsp Cumin seeds
Cooking Method
- The Scorch Fry curry paste and cumin seeds in oil for 2 minutes until fragrant.
- The Bloom Add a 30ml splash of coconut milk; stir until a yellow oil separates on top.
- The Swell Add the rest of the milk and veg; simmer for 15 minutes until the sweet potato is melting.
- The Final Flourish Finish with a squeeze of lime and raw red chili slices.
