THE GOLDEN EGG-SILK
(Our Play on Toucinho do Céu / Cinnamon Almond Cake)

Ingredients
- 10 Egg yolks
- 200g Almond meal
- 200g Sugar
- 100ml Water
- 50g Butter
- 1 Cinnamon stick
- 1 tsp Ground Cinnamon
Cooking Method
- The Swell Boil water and sugar with the cinnamon stick until it forms a thick syrup; remove stick.
- The Bloom Add the almond meal and ground cinnamon with a tiny 10ml splash of warm milk to release the oils.
- The Silk Merge Slowly whisk the spiced almond syrup into the egg yolks; return to low heat, stirring until thick.
- The Bake Pour into a dish; roast at 180°C for 20 minutes until the top is charred golden.
- The Final Flourish Dust heavily with raw icing sugar and more raw cinnamon.
