- 500g Potatoes (thinly sliced)
- 1 Large onion (sliced)
- 6 Eggs (whisked)
- 1 tsp Salt
- 1 tsp Black pepper
- 150ml Olive oil (for frying)
Cooking Method
- The Swell Fry potatoes and onions in the oil on medium heat for 15 minutes until meltingly soft but not browned; drain oil.
- The Bloom Add salt and pepper to the whisked eggs with a tiny 10ml splash of water; this helps the eggs stay tender.
- The Marriage Fold the warm potatoes into the egg silk; let sit for 5 minutes to bond.
- The Scorch Pour into a hot non-stick pan; cook for 5 minutes per side until a golden charred crust forms.
- The Final Flourish Serve at room temperature with a dusting of raw smoked paprika.
