THE GOLDEN CRUNCH-SOAK
(Our Play on Chicken Katsu Curry)
Ingredients: 2 Chicken breasts (pounded flat), 50g Panko breadcrumbs, 1 Egg, 20g Plain flour, 2 tbsp Mild curry powder, 1 tsp Turmeric, 1 Onion (pureed), 200ml Chicken stock, 1 tbsp Honey...

- 50g Panko breadcrumbs
- 1 Egg
- 20g Plain flour
- 2 tbsp Mild curry powder
- 1 tsp Turmeric
- 1 Onion (pureed)
- 200ml Chicken stock
- 1 tbsp Honey
Cooking Method
- The Scorch Dredge chicken in flour, egg, and panko; fry until golden and very crispy; slice into strips.
- The Architect In a fresh pan, sauté onion puree until sweet and golden.
- The Bloom Add curry powder and turmeric with a 30ml splash of water to form a fragrant yellow paste.
- The Simmer Add stock and honey; simmer until thickened into a silky sauce.
- The Marriage Pour the hot sauce over the crispy chicken strips right before serving.
