  • 400g Masa Harina
  • 800ml Chicken stock
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 100g Lard or Butter (melted)
  • 200g Shredded pork or chicken

Cooking Method

  1. The Bloom Whisk spices into the stock with a tiny splash of warm water to release the perfume.
  2. The Build Mix Masa Harina, fat, and spiced stock until a thick batter forms.
  3. The Marriage Layer half the batter in a dish; add meat; cover with remaining batter.
  4. The Bake Roast at 190°C for 35 minutes until the corn is firm and the edges are charred.
  5. The Final Flourish Finish with a raw hit of salsa verde and sour cream.
