- 400g Masa Harina
- 800ml Chicken stock
- 1 tsp Cumin
- 1 tsp Chili powder
- 100g Lard or Butter (melted)
- 200g Shredded pork or chicken
Cooking Method
- The Bloom Whisk spices into the stock with a tiny splash of warm water to release the perfume.
- The Build Mix Masa Harina, fat, and spiced stock until a thick batter forms.
- The Marriage Layer half the batter in a dish; add meat; cover with remaining batter.
- The Bake Roast at 190°C for 35 minutes until the corn is firm and the edges are charred.
- The Final Flourish Finish with a raw hit of salsa verde and sour cream.
