THE GOLDEN CHEESE-SWELL
(Our Play on Baked Polenta with Gorgonzola)

- 200g Quick-cook Polenta
- 800ml Water
- 100g Gorgonzola
- 50g Butter
- 1 tsp Black pepper
- 0.5 tsp Salt
- Fresh Sage
- Honey
Cooking Method
- The Swell Bring water to a boil; whisk in polenta and simmer for 5 minutes until thick.
- The Bloom Stir in pepper and butter with a tiny 15ml splash of milk to release the aromatics.
- The Marriage Pour polenta into a tray; top with chunks of gorgonzola and bake at 200°C for 10 minutes.
- The Final Flourish Finish with a drizzle of honey and raw fresh sage leaves.
