THE GOLDEN CHEESE-SWELL

Ingredients: 200g Quick-cook Polenta, 800ml Water, 100g Gorgonzola, 50g Butter, 1 tsp Black pepper, 0.5 tsp Salt, Fresh Sage, Honey...

  • 200g Quick-cook Polenta
  • 800ml Water
  • 100g Gorgonzola
  • 50g Butter
  • 1 tsp Black pepper
  • 0.5 tsp Salt
  • Fresh Sage
  • Honey

Cooking Method

  1. The Swell Bring water to a boil; whisk in polenta and simmer for 5 minutes until thick.
  2. The Bloom Stir in pepper and butter with a tiny 15ml splash of milk to release the aromatics.
  3. The Marriage Pour polenta into a tray; top with chunks of gorgonzola and bake at 200°C for 10 minutes.
  4. The Final Flourish Finish with a drizzle of honey and raw fresh sage leaves.
