Ingredients: 300g Potatoes (boiled and grated), 150g Parmesan or Montasio (grated), 1 small onion (minced), 1 tsp Black pepper, 1 tsp Dried Rosemary...

Ingredients

  • 300g Potatoes (boiled and grated)
  • 150g Parmesan or Montasio (grated)
  • 1 small onion (minced)
  • 1 tsp Black pepper
  • 1 tsp Dried Rosemary

Cooking Method

  1. The Architect Sauté the minced onion in a non-stick pan until soft and golden brown.
  2. The Bloom Stir in the rosemary and pepper with a tiny splash of water to release the oils.
  3. The Mix Combine the grated potatoes and cheese; add to the pan and flatten into a disk.
  4. The Scorch Fry for 5 minutes per side until the cheese melts and forms a dark, rock-hard crispy crust.
  5. The Finish Serve hot and crack it into pieces for a salty, textured hit.
