- 300g Potatoes (boiled and grated)
- 150g Parmesan or Montasio (grated)
- 1 small onion (minced)
- 1 tsp Black pepper
- 1 tsp Dried Rosemary
Cooking Method
- The Architect Sauté the minced onion in a non-stick pan until soft and golden brown.
- The Bloom Stir in the rosemary and pepper with a tiny splash of water to release the oils.
- The Mix Combine the grated potatoes and cheese; add to the pan and flatten into a disk.
- The Scorch Fry for 5 minutes per side until the cheese melts and forms a dark, rock-hard crispy crust.
- The Finish Serve hot and crack it into pieces for a salty, textured hit.
