Ingredients: 600g Chicken thighs (bone-in), 100g Fresh coriander, 3 Green chilies, 1 tsp Peppercorns, 2 tbsp Vinegar (blitzed), 1 tsp Turmeric, 1 tsp Cinnamon powder, 1 tsp Garlic paste...

Ingredients

  • 600g Chicken thighs (bone-in)
  • 100g Fresh coriander
  • 3 Green chilies
  • 1 tsp Peppercorns
  • 2 tbsp Vinegar (blitzed)
  • 1 tsp Turmeric
  • 1 tsp Cinnamon powder
  • 1 tsp Garlic paste

Cooking Method

  1. The Coat Slash the chicken; rub in the green paste and spices until every crevice is filled.
  2. The Rest Chill for 2 hours to allow the acid in the vinegar to carry the spices into the meat.
  3. The Scorch Fry in a heavy pan on medium-high heat until the edges are blackened and charred.
  4. The Marriage Simmer covered for 10 minutes until tender; remove lid to dry out the sauce.
  5. The Final Flourish Serve with fresh lime and raw red onion rings.
