THE GOAN ACID-GREEN
(Our Play on Chicken Cafreal)
Ingredients: 600g Chicken thighs (bone-in), 100g Fresh coriander, 3 Green chilies, 1 tsp Peppercorns, 2 tbsp Vinegar (blitzed), 1 tsp Turmeric, 1 tsp Cinnamon powder, 1 tsp Garlic paste...
Ingredients
- 600g Chicken thighs (bone-in)
- 100g Fresh coriander
- 3 Green chilies
- 1 tsp Peppercorns
- 2 tbsp Vinegar (blitzed)
- 1 tsp Turmeric
- 1 tsp Cinnamon powder
- 1 tsp Garlic paste
Cooking Method
- The Coat Slash the chicken; rub in the green paste and spices until every crevice is filled.
- The Rest Chill for 2 hours to allow the acid in the vinegar to carry the spices into the meat.
- The Scorch Fry in a heavy pan on medium-high heat until the edges are blackened and charred.
- The Marriage Simmer covered for 10 minutes until tender; remove lid to dry out the sauce.
- The Final Flourish Serve with fresh lime and raw red onion rings.
