THE GLASS-STRAND MEDLEY
(Our Play on Korean Japchae)
Ingredients: 200g Sweet Potato Starch Noodles (Glass noodles), 100g Spinach, 1 Carrot (shredded), 50g Shiitake mushrooms, 3 tbsp Soy sauce, 2 tbsp Sesame oil, 1 tbsp Sugar, 1 Onion (sliced)...

- 200g Sweet Potato Starch Noodles (Glass noodles)
- 100g Spinach
- 1 Carrot (shredded)
- 50g Shiitake mushrooms
- 3 tbsp Soy sauce
- 2 tbsp Sesame oil
- 1 tbsp Sugar
- 1 Onion (sliced)
Cooking Method
- The Swell Boil noodles for 7 minutes until bouncy; drain and rinse.
- The Scorch Stir-fry onions, carrots, and mushrooms on high heat for 3 minutes.
- The Bloom Add the soy and sugar with a 20ml splash of water; stir until the sugar melts.
- The Marriage Toss the noodles and spinach through the sauce until the greens wilt and the noodles turn dark.
- The Final Flourish Add a massive hit of sesame oil and sesame seeds.
