THE GINGER-STUNG REEF
(Our Play on Ginger Soy White Fish)
Ingredients: 2 White fish fillets (approx. 350g total), 40g Fresh ginger (matchsticks), 1 tbsp Garlic paste, 2 tbsp Soy sauce, 1 tbsp Rice vinegar, 1 tsp Sugar, Fresh spring onions, Red chili slices...

- 2 White fish fillets (approx. 350g total)
- 40g Fresh ginger (matchsticks)
- 1 tbsp Garlic paste
- 2 tbsp Soy sauce
- 1 tbsp Rice vinegar
- 1 tsp Sugar
- Fresh spring onions
- Red chili slices
Cooking Method
- The Scorch Sear fish in oil on high heat for 3 minutes per side until the edges are golden and charred.
- The Architect Push fish aside; fry ginger matchsticks until they are crispy and golden.
- The Bloom Add the silk ingredients and a 15ml splash of water; boil for 1 minute until it forms a thin, aromatic syrup.
- The Marriage Spoon the hot ginger-soy liquid over the fish while it's still in the pan.
- The Finish Top with raw spring onions and fresh chilies.
