THE GINGER-SNAP OKRA

Ingredients: 400g Okra (sliced), 2 Onions (sliced into petals), 1 tsp Turmeric, 1 tsp Amchur, 1 tsp Cumin seeds, 2 tbsp Oil, 1 tbsp Ginger matchsticks...

Ingredients

  • 400g Okra (sliced)
  • 2 Onions (sliced into petals)
  • 1 tsp Turmeric
  • 1 tsp Amchur
  • 1 tsp Cumin seeds
  • 2 tbsp Oil
  • 1 tbsp Ginger matchsticks

Cooking Method

  1. The Scorch Fry okra on high heat in oil until the edges blister; remove and set aside.
  2. The Architect Sauté onions until golden brown; do not let them mush.
  3. The Bloom Add spices and a 20ml splash of water to form a dark, clinging masala.
  4. The Marriage Toss okra and ginger matchsticks back in; stir-fry for 3 minutes.
  5. The Final Flourish Finish with a squeeze of lime to cut through the okra texture.
