THE GINGER-SNAP OKRA
(Our Play on Bhindi Doopiaja)
Ingredients: 400g Okra (sliced), 2 Onions (sliced into petals), 1 tsp Turmeric, 1 tsp Amchur, 1 tsp Cumin seeds, 2 tbsp Oil, 1 tbsp Ginger matchsticks...
Ingredients
- 400g Okra (sliced)
- 2 Onions (sliced into petals)
- 1 tsp Turmeric
- 1 tsp Amchur
- 1 tsp Cumin seeds
- 2 tbsp Oil
- 1 tbsp Ginger matchsticks
Cooking Method
- The Scorch Fry okra on high heat in oil until the edges blister; remove and set aside.
- The Architect Sauté onions until golden brown; do not let them mush.
- The Bloom Add spices and a 20ml splash of water to form a dark, clinging masala.
- The Marriage Toss okra and ginger matchsticks back in; stir-fry for 3 minutes.
- The Final Flourish Finish with a squeeze of lime to cut through the okra texture.
