THE GINGER-SILK DUCK

Ingredients: 2 Duck breasts (skin scored), 30g Fresh ginger (grated), 1 Shallot (minced), 1 tsp Black pepper, 0.5 tsp Cinnamon, 2 tbsp Honey, 50ml Orange juice, 20g Cold butter...

Ingredients

  • 2 Duck breasts (skin scored)
  • 30g Fresh ginger (grated)
  • 1 Shallot (minced)
  • 1 tsp Black pepper
  • 0.5 tsp Cinnamon
  • 2 tbsp Honey
  • 50ml Orange juice
  • 20g Cold butter

Cooking Method

  1. The Scorch Place duck skin-side down in a cold pan; heat to medium. Fry for 10 minutes until the skin is charred and the fat renders. remove.
  2. The Architect Sauté shallots and ginger in 1 tbsp of the fat until fragrant.
  3. The Bloom Add spices and honey with a 20ml splash of orange juice; the sudden steam will release the sharp ginger oils.
  4. The Swell Add remaining juice; boil until reduced to a thick lacquer. Whisk in butter off the heat.
  5. The Marriage Slice the duck and drench in the ginger-silk.
  6. The Final Flourish Top with raw ginger matchsticks and orange zest.
