THE GINGER-SILK DUCK
(Our Play on Duck with Ginger & Honey)

- 2 Duck breasts (skin scored)
- 30g Fresh ginger (grated)
- 1 Shallot (minced)
- 1 tsp Black pepper
- 0.5 tsp Cinnamon
- 2 tbsp Honey
- 50ml Orange juice
- 20g Cold butter
Cooking Method
- The Scorch Place duck skin-side down in a cold pan; heat to medium. Fry for 10 minutes until the skin is charred and the fat renders. remove.
- The Architect Sauté shallots and ginger in 1 tbsp of the fat until fragrant.
- The Bloom Add spices and honey with a 20ml splash of orange juice; the sudden steam will release the sharp ginger oils.
- The Swell Add remaining juice; boil until reduced to a thick lacquer. Whisk in butter off the heat.
- The Marriage Slice the duck and drench in the ginger-silk.
- The Final Flourish Top with raw ginger matchsticks and orange zest.
