THE GARLIC-YOGURT CLOUD
(Our Play on Greek Tzatziki)
Ingredients: 500g Greek Yogurt (strained), 1 Large Cucumber (grated and squeezed bone-dry), 4 cloves Garlic (minced), 1 tsp Salt, 1 tsp White pepper, 3 tbsp Extra virgin olive oil, 1 tbsp Lemon juice...

- 500g Greek Yogurt (strained)
- 1 Large Cucumber (grated and squeezed bone-dry)
- 4 cloves Garlic (minced)
- 1 tsp Salt
- 1 tsp White pepper
- 3 tbsp Extra virgin olive oil
- 1 tbsp Lemon juice
Cooking Method
- The Bloom Whisk lemon juice and spices in a small bowl; add a tiny 5ml splash of warm water to release the garlic oils.
- The Silk Merge Whisk the spiced juice and olive oil into the yogurt until it forms a heavy, glossy cloud.
- The Marriage Fold in the dry cucumber shreds gently.
- The Final Flourish Top with raw fresh dill matchsticks and a final drizzle of raw olive oil.
