Ingredients: 1kg Fresh Clams, 6 cloves Garlic (minced), 50g Butter, 1 tsp Black pepper, 1 tsp Salt, 150ml Dry White Wine, Handful of fresh Parsley...

  • 1kg Fresh Clams
  • 6 cloves Garlic (minced)
  • 50g Butter
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 150ml Dry White Wine
  • Handful of fresh Parsley

Cooking Method

  1. The Architect Sauté garlic in butter until it turns a pale biscuit gold—do not brown.
  2. The Bloom Add pepper and a 30ml splash of wine; the steam will release the allicin perfume.
  3. The Swell Add remaining wine; bring to a rolling boil for 1 minute.
  4. The Marriage Add clams; cover tightly and cook for 5 minutes until all have opened.
  5. The Final Flourish Finish with a massive hit of raw parsley matchsticks and a hit of lemon.
