THE GARLIC-VINEGAR REEF
(Our Play on Balkan Pickled Fish / Marinata)

Ingredients

- 2 Red onions (rings)
- 6 cloves Garlic (sliced)
- 1 tsp Black peppercorns
- 3 Bay leaves
- 1 tsp Salt
- 200ml Wine vinegar
- 100ml Water
- 1 tbsp Sugar
Cooking Method
- The Architect Fry onion rings and garlic in 2 tbsp oil until soft but still white.
- The Bloom Add spices and bay leaves with a 30ml splash of vinegar; the steam will release the woody perfume.
- The Swell Add remaining vinegar, water, and sugar; boil for 3 minutes until it forms a sharp silk.
- The Marriage Place pre-fried fish in a container; pour the boiling vinegar-mist over the reef.
- The Final Flourish Serve cold after 24 hours with raw fresh lemon and parsley.
