THE GARLIC-VINEGAR REEF
(Our Play on Balkan Fish Marinade)

Ingredients
- 4 Small White Fish (Fried or Grilled)
- 6 cloves Garlic (sliced)
- 2 Bay leaves
- 1 Red onion (rings)
- 1 tsp Black peppercorns
- 1 tsp Dried Oregano
- 150ml Wine vinegar
- 100ml Water
- 50ml Olive oil
Cooking Method
- The Architect Fry onion and garlic in oil until sweet.
- The Bloom Add spices and bay leaves with a 30ml splash of vinegar; the steam will release the piquant oils.
- The Swell Add remaining vinegar, water, and 1 tsp sugar; boil for 3 minutes until a sharp red silk forms.
- The Marriage Pour the hot vinegar-mist over the pre-cooked fish; let sit for 1 hour.
- The Final Flourish Serve cold with raw fresh parsley matchsticks.
