THE GARLIC-SILK WHITE MIST
(Our Play on Greek Skordalia)
Ingredients: 400g Stale white bread (crusts removed), 200g Walnuts, 8 cloves Garlic (minced to a paste), 1 tsp Salt, 1 tsp White pepper, 150ml Extra virgin olive oil, 2 tbsp Wine vinegar...
Ingredients
- 400g Stale white bread (crusts removed)
- 200g Walnuts
- 8 cloves Garlic (minced to a paste)
- 1 tsp Salt
- 1 tsp White pepper
- 150ml Extra virgin olive oil
- 2 tbsp Wine vinegar
Cooking Method
- The Swell Soak bread in water for 5 minutes; squeeze bone-dry.
- The Bloom Whisk garlic and spices with the vinegar; add a tiny 10ml splash of warm water to release the allicin perfume.
- The Silk Merge Blitz walnuts and bread in a processor; slowly drizzle in oil until it becomes a bone-white silk.
- The Marriage Fold in the spiced garlic-vinegar mixture; pulse once.
- The Final Flourish Serve as a raw dip; top with a single black olive and extra raw olive oil.
