THE GARLIC-SILK SQUASH
(Our Play on Balkan Roasted Butternut)

Ingredients
- 1 Butternut squash (cubed)
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Dried Mint
- 100g Feta (crumbled)
- 60ml Olive oil
- 1 tbsp Honey
Cooking Method
- The Mix Toss squash with oil and spices in a large bowl.
- The Bloom Add a tiny 15ml splash of water to the bowl; the moisture helps the mint and garlic oils stain the squash skins.
- The Scorch Roast at 210°C for 25 minutes until the edges are blackened and charred.
- The Marriage Top with honey and crumbled Feta while still hot; the cheese should soften into a white silk.
- The Final Flourish Top with raw pumpkin seeds and extra fresh mint.
