THE GARLIC-SILK SLURP
(Our Play on Aïgo Boulido / Garlic Soup)

Ingredients
- 10 cloves Garlic (peeled and smashed)
- 2 tsp Dried Sage
- 1 tsp Black pepper
- 1 tsp Salt
- 1L Chicken stock
- 2 Egg yolks
- 50ml Olive oil
Cooking Method
- The Scorch Gently sauté garlic in oil until it is pale gold and soft—do not brown.
- The Bloom Add sage and pepper with a 30ml splash of stock; the steam will release the herbal oils.
- The Swell Add remaining stock; simmer for 10 minutes. Remove garlic and blitz until smooth.
- The Silk Merge Whisk yolks with a splash of hot soup; slowly stir back into the pot off the heat until it forms a pale yellow silk.
- The Final Flourish Serve over toasted bread with a drizzle of raw olive oil.
