THE GARLIC-SILK REEF-SWELL
(Our Play on Chipotle Garlic Lobster)

Ingredients
- 400g Lobster tail or Prawns (chunks)
- 6 cloves Garlic (finely sliced)
- 50g Butter
- 1 tbsp Chipotle paste
- 1 tsp Salt
- 0.5 tsp Black pepper
- 50ml White wine
- 1 tbsp Lime juice
Cooking Method
- The Scorch Sear lobster chunks in 1 tbsp oil for 2 minutes until charred; remove.
- The Architect Melt butter and sauté garlic until it is a pale biscuit gold.
- The Bloom Add chipotle and wine with a 20ml splash of water; boil for 1 minute until reduced.
- The Marriage Return lobster to the pan; toss for 1 minute until coated in the garlic-smoke silk.
- The Final Flourish Top with a massive hit of raw fresh parsley and lime zest.
