THE GARLIC-SILK REEF PULP

Ingredients: 400g Salt cod (soaked) or fresh Cod, 200g Potatoes (peeled and cubed), 6 cloves Garlic (minced), 100ml Extra virgin olive oil, 1 tsp White pepper, 0.5 tsp Nutmeg...

Ingredients

  • 400g Salt cod (soaked) or fresh Cod
  • 200g Potatoes (peeled and cubed)
  • 6 cloves Garlic (minced)
  • 100ml Extra virgin olive oil
  • 1 tsp White pepper
  • 0.5 tsp Nutmeg

Cooking Method

  1. The Boil Boil fish and potatoes in milk until soft; drain and reserve 50ml of the milk.
  2. The Architect Gently heat oil and garlic until it is pale gold and nutty.
  3. The Bloom Add spices with a 20ml splash of the reserved milk to form a sharp, aromatic steam.
  4. The Mash Mash fish and potatoes into the garlic oil; slowly add the remaining oil until it becomes a thick, creamy silk.
  5. The Final Flourish Top with raw fresh parsley and serve with charred baguette.
