Ingredients
- 400g Salt cod (soaked) or fresh Cod
- 200g Potatoes (peeled and cubed)
- 6 cloves Garlic (minced)
- 100ml Extra virgin olive oil
- 1 tsp White pepper
- 0.5 tsp Nutmeg
Cooking Method
- The Boil Boil fish and potatoes in milk until soft; drain and reserve 50ml of the milk.
- The Architect Gently heat oil and garlic until it is pale gold and nutty.
- The Bloom Add spices with a 20ml splash of the reserved milk to form a sharp, aromatic steam.
- The Mash Mash fish and potatoes into the garlic oil; slowly add the remaining oil until it becomes a thick, creamy silk.
- The Final Flourish Top with raw fresh parsley and serve with charred baguette.
