THE GARLIC-SILK REEF-LACQUER
(Our Play on Camarones al Ajillo / Garlic Shrimp)

Ingredients
- 400g King prawns
- 8 cloves Garlic (finely sliced)
- 50g Butter
- 2 tsp Chili flakes
- 1 tsp Salt
- 2 tbsp Lime juice
- 1 tbsp Honey
Cooking Method
- The Scorch Heat a heavy pan; sear prawns for 1 minute per side until pink; remove.
- The Architect Melt butter and sauté garlic until it turns deep golden and nutty.
- The Bloom Add chili flakes with a 20ml splash of lime juice; the steam will release the sharp spice.
- The Marriage Add honey; return prawns and toss for 1 minute until every reef is lacquered in golden silk.
- The Final Flourish Finish with a massive hit of raw fresh parsley and extra lime.
