THE GARLIC-SILK POTATOES

Ingredients: 500g Potatoes (peeled and cubed), 8 cloves Garlic (whole, peeled), 50g Butter, 100ml Warm milk, 3 tbsp Olive oil, 1 tsp Black pepper, 1 tsp Smoked paprika...

Ingredients

  • 500g Potatoes (peeled and cubed)
  • 8 cloves Garlic (whole, peeled)
  • 50g Butter
  • 100ml Warm milk
  • 3 tbsp Olive oil
  • 1 tsp Black pepper
  • 1 tsp Smoked paprika

Cooking Method

  1. The Boil Boil potatoes and whole garlic cloves together until the garlic is meltingly soft.
  2. The Bloom Drain; add butter, pepper, and a tiny 10ml splash of milk; the heat will bloom the garlic scent.
  3. The Mash Crush everything together until smooth; slowly whisk in the remaining milk and olive oil.
  4. The Final Flourish Top with raw fresh chives and a dusting of raw smoked paprika.
