THE GARLIC-SILK POTATOES
(Our Play on Italian Garlic Mash)
Ingredients: 500g Potatoes (peeled and cubed), 8 cloves Garlic (whole, peeled), 50g Butter, 100ml Warm milk, 3 tbsp Olive oil, 1 tsp Black pepper, 1 tsp Salt...
Ingredients
- 500g Potatoes (peeled and cubed)
- 8 cloves Garlic (whole, peeled)
- 50g Butter
- 100ml Warm milk
- 3 tbsp Olive oil
- 1 tsp Black pepper
- 1 tsp Salt
Cooking Method
- The Boil Boil potatoes and whole garlic cloves together until the garlic is meltingly soft.
- The Bloom Drain; add butter, pepper, and a tiny 10ml splash of milk; the heat will bloom the garlic scent.
- The Mash Crush everything together until smooth; slowly whisk in the remaining milk and olive oil.
- The Final Flourish Top with raw fresh chives and a drizzle of raw garlic oil.
