THE GARLIC-SILK POTATO-CLOUDS

Ingredients: 500g Fresh Gnocchi, 10 cloves Roasted Garlic (mashed), 50g Butter, 150ml Double cream, 50g Parmesan, 1 tsp Black pepper, 1 tsp Dried Thyme...

Ingredients

  • 500g Fresh Gnocchi
  • 10 cloves Roasted Garlic (mashed)
  • 50g Butter
  • 150ml Double cream
  • 50g Parmesan
  • 1 tsp Black pepper
  • 1 tsp Dried Thyme

Cooking Method

  1. The Scorch Fry the gnocchi in a pan with olive oil until the edges are golden and crispy; remove.
  2. The Architect Melt butter and stir in the mashed roasted garlic until fragrant and combined.
  3. The Bloom Add the thyme and pepper with a 30ml splash of pasta water to release the oils.
  4. The Silk Merge Pour in the cream; simmer for 3 minutes until it reduces to a thick velvet.
  5. The Marriage Toss the gnocchi in the silk until coated; stir in the parmesan until melted.
  6. The Final Flourish Top with raw fresh parsley and a hit of lemon zest.
