(Our Play on Creamy Provencal Spinach)

- 500g Fresh Spinach
- 4 cloves Garlic (minced)
- 50g Butter
- 1 tsp Nutmeg
- 1 tsp Black pepper
- 100ml Double cream
- 20g Parmesan
Cooking Method
- The Architect Melt butter and sauté garlic until it turns a pale biscuit gold.
- The Bloom Add nutmeg and pepper with a tiny 15ml splash of cream; the heat will bloom the woodiness.
- The Marriage Add spinach; toss on high heat until wilted. Pour in remaining cream.
- The Silk Merge Simmer for 1 minute then stir in parmesan until it vanishes into a thick silk.
- The Final Flourish Top with extra raw nutmeg and black pepper.
