- 400g Mixed Mushrooms (sliced)
- 300g Arborio rice
- 2 Onions (finely diced)
- 4 cloves Garlic
- 1L Veg stock
- 50ml White wine
- 50g Butter
Cooking Method
- The Dry Scorch Fry mushrooms in a dry pan on high heat until dark and charred; remove.
- The Architect Sauté onions in 1 tbsp oil until golden brown.
- The Bloom Add garlic and rice with a 30ml splash of stock; toast the grains until the edges are clear.
- The Swell Add wine and stock one ladle at a time, stirring until creamy.
- The Final Flourish Stir in the mushrooms, butter, and raw parmesan for a velvety finish.
