  • 400g Mixed Mushrooms (sliced)
  • 300g Arborio rice
  • 2 Onions (finely diced)
  • 4 cloves Garlic
  • 1L Veg stock
  • 50ml White wine
  • 50g Butter

Cooking Method

  1. The Dry Scorch Fry mushrooms in a dry pan on high heat until dark and charred; remove.
  2. The Architect Sauté onions in 1 tbsp oil until golden brown.
  3. The Bloom Add garlic and rice with a 30ml splash of stock; toast the grains until the edges are clear.
  4. The Swell Add wine and stock one ladle at a time, stirring until creamy.
  5. The Final Flourish Stir in the mushrooms, butter, and raw parmesan for a velvety finish.
