THE GARLIC-SILK BEEF-STRANDS
(Our Play on Spanish Beef Strips with Garlic / Straccetti)

- 400g Beef sirloin (paper-thin strips)
- 6 cloves Garlic (minced)
- 60ml Olive oil
- 1 tsp Black pepper
- 1 tsp Smoked paprika
- Handful of fresh Arugula
- 1 Lemon (juiced)
Cooking Method
- The Architect Heat oil and sauté garlic until it starts to turn pale golden.
- The Bloom Add the pepper and paprika with a tiny 10ml splash of water to form a sharp, smoky aromatic steam.
- The Scorch Add beef strips; stir-fry on maximum heat for 90 seconds until charred and browned.
- The Marriage Remove from heat; toss in the arugula and lemon juice; the heat of the meat will wilt the greens.
- The Final Flourish Top with raw manchego shavings and extra black pepper.
