THE GARLIC-SILK BEEF-STRANDS

Ingredients: 400g Beef sirloin (paper-thin strips), 6 cloves Garlic (minced), 60ml Olive oil, 1 tsp Black pepper, 1 tsp Salt, Handful of fresh Arugula, 1 Lemon (juiced)...

  • 400g Beef sirloin (paper-thin strips)
  • 6 cloves Garlic (minced)
  • 60ml Olive oil
  • 1 tsp Black pepper
  • 1 tsp Salt
  • Handful of fresh Arugula
  • 1 Lemon (juiced)

Cooking Method

  1. The Architect Heat oil and sauté garlic until it starts to turn pale golden.
  2. The Bloom Add the pepper and salt with a tiny 10ml splash of water to form a sharp, aromatic steam.
  3. The Scorch Add beef strips; stir-fry on maximum heat for 90 seconds until charred and browned.
  4. The Marriage Remove from heat; toss in the arugula and lemon juice; the heat of the meat will wilt the greens.
  5. The Final Flourish Top with raw parmesan shavings and extra black pepper.
