THE GARLIC-ROASTED SLABS
(Our Play on Chuletillas de Cordero / Lamb Chops)
Ingredients: 600g Lamb chops (thin), 4 cloves Garlic (minced), 3 tbsp Olive oil, 1 tsp Dried Rosemary, 1 tsp Black pepper, 1 tsp Smoked paprika, Fresh Lemon, Raw Rosemary sprigs...

- 600g Lamb chops (thin)
- 4 cloves Garlic (minced)
- 3 tbsp Olive oil
- 1 tsp Dried Rosemary
- 1 tsp Black pepper
- 1 tsp Smoked paprika
- Fresh Lemon
- Raw Rosemary sprigs
Cooking Method
- The Coat Rub the lamb with oil and spices; add a tiny 10ml splash of water to the rub to help the paprika penetrate the meat.
- The Rest Let the meat sit for 30 minutes to allow the garlic architecture to build.
- The Scorch Grill on very high heat for 3 minutes per side until the edges are blackened and charred.
- The Finish Serve immediately with a massive squeeze of raw lemon juice.
