THE GARLIC-REEF SNAP

Ingredients: 400g King prawns, 8 cloves Garlic (minced), 100ml Extra virgin olive oil, 1 tbsp Piri-Piri flakes, 1 tsp Salt, 1 tbsp White wine vinegar, Fresh Parsley...

  • 400g King prawns
  • 8 cloves Garlic (minced)
  • 100ml Extra virgin olive oil
  • 1 tbsp Piri-Piri flakes
  • 1 tsp Salt
  • 1 tbsp White wine vinegar
  • Fresh Parsley

Cooking Method

  1. The Architect Gently heat oil and garlic until it starts to turn a pale biscuit gold.
  2. The Bloom Add piri-piri and salt with a tiny 10ml splash of vinegar; the reaction will release the sharp spice oils.
  3. The Scorch Increase heat to maximum; add prawns and sear for 2 minutes until pink and charred.
  4. The Marriage Toss vigorously until the prawns are lacquered in the garlic-red silk.
  5. The Final Flourish Top with a massive amount of raw fresh parsley and serve with bread.
