THE GARLIC-OIL REEF-STRANDS

Ingredients: 400g Lobster tail or King Prawns (chunks), 6 cloves Garlic (finely sliced), 60ml Extra virgin olive oil, 1 tsp Chili flakes, 1 tsp Black pepper, 0.5 tsp Turmeric (for gold oil), 50ml White wine, 50ml Pasta water...

Ingredients

  • 400g Lobster tail or King Prawns (chunks)
  • 6 cloves Garlic (finely sliced)
  • 60ml Extra virgin olive oil
  • 1 tsp Chili flakes
  • 1 tsp Black pepper
  • 0.5 tsp Turmeric (for gold oil)
  • 50ml White wine
  • 50ml Pasta water

Cooking Method

  1. The Architect Gently heat the oil and garlic until the slices are pale gold and fragrant.
  2. The Bloom Add the chili, pepper, and turmeric with a 20ml splash of wine to bloom the spices into a glowing gold oil.
  3. The Scorch Increase heat and add the seafood; sear for 2 minutes until pink and charred.
  4. The Marriage Add the remaining wine and pasta water; toss with cooked linguine until every strand is glistening.
  5. The Final Flourish Top with a massive hit of raw fresh parsley and lemon zest.
