THE GARLIC-LAUREL REEF
(Our Play on Clams with Heavy Garlic & Bay)

- 1kg Fresh Clams
- 8 cloves Garlic (smashed)
- 6 Bay leaves (torn)
- 60ml Olive oil
- 1 tsp Black pepper
- 1 tsp Salt
- 150ml Dry White Wine
- 1 tbsp Lard
Cooking Method
- The Architect Heat oil and lard; sauté garlic and bay leaves until the garlic is golden brown.
- The Bloom Add pepper and a 30ml splash of wine; the steam will release the woody perfume of the bay.
- The Swell Pour in remaining wine; bring to a rolling boil. Add clams.
- The Marriage Cover and shake for 5 minutes until all shells have popped.
- The Final Flourish Stir in a massive amount of raw fresh coriander and serve with charred bread.
